Pastelería Gimar was born in 1986, in a small craft shop in the hamlet of Murcia, Zarandona, Spain. There, the founder, Antonio Martínez López, making use of the traditional pastry recipes he had learned from his family, began making muffins and sponge cakes.

In 1992, the company moved to larger premises to expand its production and improve efficiency. In 2005, it moved to its current facilities in Molina de Segura, with over 2,000 m2, allowing it to meet growing demand and expand internationally. The company has been committed to innovation and continuous improvement, incorporating new technologies and processes, and has received support from European funds for energy efficiency and sustainability projects.
