Ancestral Blooming Spring Salt 1.5kg

We obtain this salt through slow evaporation under a south or very gentle wind. This is the first crystallization process, and the small floating crystals must be carefully and patiently collected from the surface of the salt pans. Because of its slow evaporation, it is collected early or late in the day. Ancestral fleur de sel is particularly rich in magnesium and potassium. It is the ideal salt for finishing dishes, as its crystals are fragile and melt and blend evenly with any cooking or ingredient, providing that final, much-needed touch to our food.
