• It comes from Indonesia and, contrary to what we might think, it doesn't have a coconut flavour nor is it white, since it is not extracted from the coconut itself. It is extracted from the nectar of coconut flowers and is dark brown in colour, very similar to the colour of Panela. It also has a similar aroma and flavour to this sugar from Colombia, but it has more intense notes, like black liquorice and is less sweet.
