PINOSO CEPA Red Wine 50 bottle 0.75 L

History and tradition define a wine made exclusively with organic grapes from the oldest vines of the Monastrell variety. For this very special wine, we select dry-farmed vineyards over 45 years old. After reaching optimal ripeness, the grapes undergo a very gentle destemming and crushing process. During the first days of fermentation in stainless steel tanks, the temperature is maintained at 22°C, after which we increase it to 28°C for the completion of alcoholic fermentation. The lower temperature at the beginning better preserves the fresh fruit flavors, while the higher temperature helps maximize color intensity and the extraction of ripe tannins.
