This wine is made with selected Airén and Macabeo grapes, harvested by hand. The grapes are macerated for 10 hours at a low temperature (10°C) to extract the maximum amount of primary aromas. The free-run juice is then bled off and transferred to temperature-controlled stainless steel tanks. Fermentation lasts 15 days at a temperature between 12 and 14°C.
