Colosia, El Cano, Pedro Ximenez

Activity
Since 1838, it is located at the mouth, in the Bay of Cádiz, of the Guadalete River. The dry winds of Levante and humid of Poniente coming from the Atlantic regulate the environmental humidity maintaining the optimal conditions for the wines. The stability and quality of the Gutiérrez-Colosía wines are guaranteed by a careful aging by the system of criaderas and soleras, following the best tradition of the region. The structure of the wineries is known in the area as "cathedral ship". They are buildings of great height and numerous arcs that expose the wines to the influence of the special climate of which the region of Jerez enjoys. Heirs of a long winemaking tradition: The first ship was built in 1838 and is practically the same as it was then. It passed through several owners until at the beginning of the 20th century it was bought by Mr. José Gutiérrez Dosal, great-grandfather of the last generation of the Gutiérrez-Colosía family. In 1969, the Gutiérrez-Colosía family bought the ruins of the Palace of the Count of Cumbrehermosa -loader of the Indies-, which already had a winery, and in its place they built two more warehouses. The Bodegas Gutiérrez-Colosía are the only ones that currently go directly to the Guadalete River, which provides the perfect humidity for the biological aging of the fine wines under the veil "en flor" (microorganisms that reproduce on the surface of the wine).
