Melior de Matarromera comes from vineyards located near the Monastery of Santa María de Valbuena, the birthplace of the Ribera del Duero region, where Cistercian monks reintroduced vine cultivation in the Middle Ages. Vineyards are between 20 and 40 years old. Individual monitoring of the plots is carried out to achieve the optimal harvest time, seeking maximum varietal expression. The grapes are destemmed and crushed. Cold maceration takes place for three days before classic vinification at 25-27°C. Subsequent maceration takes place with periodic pumping over, and the best time for decanting is determined based on daily tastings. Once malolactic fermentation is complete, aging begins in oak barrels for more than four months.
