After the soft pressing of the pomace, these gather the most suitable qualities for obtaining the best brandy. The sugars that remain in the must that impregnates the skins ferment in a few weeks, after which the pomace is ready to be distilled. The distillation is carried out in modern facilities made up of two discontinuous type stills, by the steam drag system; in each distillation the different fractions are perfectly separated: heads, heart and tails.
