Gallaecia is the name given by the Romans to the rugged province in the northwest of the Iberian Peninsula, populated by thousands of castreño and Celtic settlements, today known as Galicia. Martín Códax Gallaecia is the result of many years of experience in the cultivation of Albariño and represents the consecration of this varietal as one of the best and most versatile white varieties in the world. It is a noble, botrytis-free dry wine that is unique for its balance and complexity of aromas. PRODUCTIONMartín Códax Gallaecia is a late harvest wine made from grapes with a high percentage of noble botrytis, a phenomenon that occurs in exceptional years, which makes its production and the uniqueness of this wine even more special.During the over-ripening period, Botritys cinerea develops naturally, causing the grape to degrade, giving it the concentration and aromatic characteristics typical of noble rot wines.Once this late harvest has been carried out, a low-pressure pressing is carried out with whole bunches. Fermentation takes place in stainless steel tanks and, finally, the wine is subjected to a reductive ageing process for 3 years.
