PREPARATION Martín Códax Espumoso is made from an early harvest seeking the optimal point of ripeness for this type of elaboration that guarantees its freshness and balance. Following the traditional method, the second fermentation takes place slowly in the bottle with careful temperature control, allowing the natural formation of the bubble. Subsequently, it is aged in stacks for 38 months on its lees before disgorging, providing aromatic complexity that favors a very fine and enveloping bubble, perfectly integrated.
