Martín Códax Vindel was born coinciding with the centenary of the discovery of the Vindel Parchment, a manuscript containing the original lyrics and music of the cantigas of the renowned medieval troubadour Martín Códax. The unique ripening of this vineyard gives the grapes a pinkish hue which, together with its careful production process, gives Martín Códax Vindel great structure, velvety character and a unique aromatic complexity. The bunches selected for Martín Códax Vindel come from the Agro de Tremoedo plot (Val do Salnés) where viticulture is practiced aimed at achieving a very porous and low-yield vineyard. This allows extreme sun exposure of the grapes, necessary to achieve this peculiar ripening. The harvest is carried out manually, approximately 20 days after the usual time and once the grapes reach their unique pink color. It is then subjected to cryomaceration between -4 and -8oC for 48 hours followed by cold pressing seeking to maximize the extraction of its aromatic compounds.
