Martín Sarmiento Villa Otero 3x75 Cl DO Bierzo

Martín Sarmiento (Villafranca del Bierzo, 1695) was a learned and intellectual monk, ahead of his time, who dedicated his life to the study of botany, agriculture and the defence of Galician culture and language. In Villa Otero de Toral, the vine grows facing east: taking advantage of the morning sun, protected from the hot summer afternoons. Martín Sarmiento has given birth to his freshest profile. Because here, in this place, a wine was born that emanates floral, balsamic, mineral. Reflecting a land of marked slopes and soils of decomposed slate. Its silky mouthfeel is granted by vines cultivated more than 80 years ago. After aging for 17 months, we will be overwhelmed by its Atlantic character, the result of the slow maturation of the Mencía. This wine from the village is made by manual harvest in 20 kg boxes, from selected plots in the Villa de Otero de Toral. Once the grapes arrive at the winery and, after passing through the selection table, they undergo a pre-fermentation maceration at 12oC. Subsequently, alcoholic fermentation begins at 24-26oC, after which they undergo a maceration process again before being decanted. Once malolactic fermentation is complete, they are aged for 17 months in 100% French oak barrels and then bottled in January 2020.
