Martin Sarmiento Villa Valtuille Case 1x75 Cl DO Bierzo

Martín Sarmiento (Villafranca del Bierzo, 1695) was a learned and intellectual monk, ahead of his time, who dedicated his life to the study of botany, agriculture and the defence of Galician culture and language. In Villa de Valtuille we see a vineyard facing south with vines more exposed in these lands. A perfect combination to make a very mature and concentrated wine. From clay soil and old vines, more than 80 years old, a highly structured mouthfeel emerges. Voluminous. A warm wine, the result of extreme exposure to the sun, which drinks maturity and knows how to maintain the freshness of the Mencía. This villa wine is made by hand harvesting in 20 kg boxes, from selected plots of the Villa de Valtuille de Arriba. Once the grapes arrive at the winery and, after passing through the selection table, they undergo a pre-fermentation maceration at 12oC. Alcoholic fermentation then begins at 24-26oC, after which it again undergoes a maceration process before being decanted.
