Manual harvest. The schist soil, a type of slate that is not common in the area, is less deep than the granite soil, poorer, with higher quality and lower grape production. Vineyards established on slopes, not in fertile and productive hollows. Trellised vines, less productive, but with better exposure to the sun, which allows for better ripening, with higher sugar content and better degradation of malic acid. VINIFICATION Cold pre-fermentation maceration of different durations depending on the variety, essential for aromatic grapes. Alcoholic fermentation with our own selected yeast. The three varieties are vinified separately to be able to choose the best percentage depending on the vintage, and then the blend is made so that all the bottling batches have the same characteristics with their natural evolution in the bottle. 30% of the final blend is aged on lees. TASTING NOTES The Albariño gives us fruity aromas and structure in the mouth. The Caíño Blanco will give balance of acidity, smoothness, mineral extraction 1, character and uniqueness. Finally, the Loureiro, which provides floral aromatic intensity and balsamic touches. The Caíño is the variety that best shows the "terroir" of O Rosal. Great aromatic and gustatory complexity, with aromas of ripe or stone fruit, peach, pineapple and orange peel; with some mineral or earthy memories and memories of aromatic leaves such as bay leaves and mint. In the mouth it is a wine of great character, intense but fresh, appetizing and at the same time agile, with structure, smoothness, volume and a long finish.
