The origin of the Fèvre family dates back many centuries, in the heart of the Chablis vineyard. The family genealogical tree dates back to 1745. Zephyr was already cultivating strains in Vaulorent; back in the 19th century. But it was not until the beginning of the 20th century, under the leadership of Marcel (1876-1976), Gilles' great-grandfather, a great entrepreneur who predicted the success of Chablis, that the property expanded. Later, with Bernard (1902-1993), Gilles' grandfather, they expanded it again with the acquisition of the Chablis Grand Cru (Les Preuses) and Chablis Premier Cru (Fourchaume) lands. Jacques, Gilles's father, expanded the property again by acquiring the Chablis lands and plantations on plots previously destroyed by phylloxera. Gilles obtained his Diplôme National d'oenologue (National Diploma of Oenology, DNO) in Dijon; where he met Nathalie. At present, thanks to the experience gained in France and abroad, the objective is to improve and enrich the heritage that their ancestors have left as a legacy. In addition, the winery collaborates with organizations for the defense and development of the DO Chablis (such as the Syndicat de Défense de l'Appellation Chablis, INAO, BIVB, etc.).
