• Harvested manually in 15-kilogram boxes, the grapes are harvested in our vineyards, which are over 30 years old on average. Fermentation takes place in Allier wooden vats for 11 days at temperatures between 24 and 28°C. Aging takes place for a minimum of 18 months in new French and American oak barrels. The wine rests in the tank until bottling, and then spends a minimum of 18 months in our wine cellar.
