Features

  • No more than 2 kg per plant. Each variety is harvested separately, and the bunches are hand-picked into boxes, weighing no more than 10 kg per box. Harvesting begins with the first rays of sunlight, taking advantage of the low temperatures.
  • Skin maceration of each variety for a maximum of 8 hours at low temperature. Separation of the free-run must from the pressed must, using only the finest grades. Mild static settling of the musts at low temperature.
  • Both Chardonnay, Sauvignon Blanc, and Macabeo ferment in new, second-, and third-year barrels, using French oak barrels with capacities of 225 and 300 liters. Once alcoholic fermentation is complete, the wines are barrel-aged on their lees, with two battonages daily during the first two months.
  • It remains in barrels for 4-6 months, depending on the wine's development, and then undergoes three battonages per week after the first two months of aging.
  • The year 2020 began with a milder-than-usual winter season, with average temperatures 2°C higher than normal. This period was marked by much higher-than-normal humidity, with accumulated precipitation in the form of rain and snow 60% above normal.
