Features

  • The bunches are hand-picked into boxes weighing no more than 10 kg per box. Harvesting begins with the first rays of sunlight, taking advantage of the low temperatures. This variety begins harvesting in mid-September.
  • Production in a 7000 litre truncated-cone concrete tank. Pre-maceration at 3-4°C for 24 hours in a cold chamber. Alcoholic fermentation takes place in concrete tanks, with a maceration period of around 18 days. Two pump-overs are carried out daily with air to a gravity of 1020, which is then carried out without air, and three deléstages are carried out during the maceration process, between gravity values of 1070-1040 for alcoholic fermentation.
  • The wine is aged in barrels and concrete eggs for approximately nine months, depending on the wine's development. Malolactic fermentation is carried out in barrels and eggs using first- and second-year French oak barrels from Alliers, with volumes of 225 liters and 300 liters. During the first few months, batonage is performed weekly.
