Features

  • Each variety is harvested separately, with the bunches collected mechanically using a grape harvester with an integrated destemmer. For the mechanized harvest of whites, the harvest is carried out at night.
  • It remains in stainless steel tanks for 3-4 months, aging on lees in these for a period of 2-3 months.
  • In January, the tirage (sugar and yeast are added to the base wine before immediate bottling, thus producing the second fermentation in the bottle) takes place. Disgorging takes place after a minimum of 9 months of maturation in an underground cellar, with the addition of sugar, obtaining 10 g/l, resulting in a brut cava.
