Features

  • Each variety is harvested separately, with the bunches hand-picked into boxes weighing no more than 10 kg per box. The harvest begins with the first rays of sunlight, taking advantage of the low temperatures, and the red harvest begins in mid-September.
  • It remains in barrels for approximately 14 months, depending on the wine's development, undergoing malolactic fermentation in barrels using first-, second-, and third-year French Alliers oak barrels, using volumes of 225 liters and 300 liters.
  • Production in a 10,000-liter truncated-cone concrete tank. Pre-maceration at 3-4°C for 24 hours in a cold chamber. Alcoholic fermentation takes place in concrete tanks, with maceration periods of around 18 days. The fermentation is carried out with aeration twice daily up to a gravity of 1020, followed by de-aeration three times during the maceration period at gravity values of 1070-1040 for alcoholic fermentation.
