Red Wine DOP from Sierra de Salamanca La Zorra Original 75cl

It was the winery's first wine, back in the 2010 harvest, hence its name, its origin. It's our best-known wine and the one we produce the most bottles of, perfect for getting started with wines from the Sierra de Salamanca. Harvested early to maintain freshness and acidity in a group of vines over 60 years old, combining slate, clay, and granite soils. Selection is carried out at the table with complete destemming and gentle crushing. Vatting and cold pre-fermentation maceration lasts several days with manual punching down. Spontaneous alcoholic fermentation with native yeast at a controlled temperature (maximum 23°C) and twice daily pumping over. After decanting and light pressing, the wine undergoes malolactic fermentation, partly in used barrels and partly in stainless steel tanks. We let it settle in the tank for two months before transferring it to 225-litre French (70%) and American (30%) barrels in the second and third year, where it remains for 14 months.

  • Sierra de Salamanca DOP Red Wine. Blend of 50% Tempranillo and 50% Rufete. The Rufete grape is native to the Sierra de Salamanca. This wine is aged for 14 months in French oak barrels.
