Red Wine DOP from Sierra de Salamanca Cabras Pintás 75cl

Cabras Pintás takes its name from the eponymous canchal, located in our spectacular Batuecas Valley. It was here that the first Neolithic cave paintings in the region were discovered, and it was the first to be protected by a 1921 law. It is, therefore, the first example of civilization in our land. Cabras Pintás is a fresh wine with a marked rustic character. We sought to resemble the wines historically produced by each family in their homes here in the Sierra de Francia. The style of wine our grandparents made using modern techniques. Made with 70% Tempranillo and 30% Rufete from vines over 60 years old, combining Garcibuey slate soils with San Esteban and Santibañez granite. Selection is carried out at the table with complete destemming and gentle crushing. Vatting and cold pre-fermentation maceration. Spontaneous alcoholic fermentation with native yeast for 12-13 days at a controlled low temperature (maximum 22°C). After racking and light pressing, the wine undergoes malolactic fermentation in stainless steel tanks with selected lactic acid bacteria for four weeks, followed by 15 months of aging in used French and American oak barrels.
