Red Wine DOP from Sierra de Salamanca La Vieja Zorra 75 cl

For this wine, we select grapes from four very old vineyards on both sides of the Alagón River, combining granite soils that provide finesse and slate soils for a mineral character, ensuring a yield of no more than 3,500 kilos per hectare. Destemming is followed by manual table selection and gentle crushing. Vatting and pre-fermentation maceration for 36 hours in cold conditions. Spontaneous and prolonged alcoholic fermentation to promote the extraction of the polyphenolic fraction is carried out with native yeast at a controlled temperature (never exceeding 23°C) in stainless steel tanks. Malolactic fermentation takes place in French oak barrels, which, after the corresponding cleaning racking, leads to a double aging process. For the first 12 months, it remains in 225-liter French barrels. After this time, we homogenize the batch in tanks and return it—already assembled—to new “rebollo” (Quercus Pyrenaica) barrels for another three months before bottling.
