Red Wine DOP from Sierra de Salamanca La Zorra Luzmila 75cl

We harvest early (August 25th) to respect the natural acidity and prevent the alcohol content from skyrocketing. We harvest by hand in 18kg boxes to avoid breakage and must-picking, following our usual protocol. We then vat the grapes cold, destemmed, and crushed them in a tank flooded with dry ice, kept at 5°C. We then immediately bleed them off—to minimize pigmentation and maintain that beautiful onion-skin color that the rufete gives us—into another tank, also with controlled cooling. We keep the pink must in a stainless steel tank at 6°C for 14 days for settling by precipitation. Afterwards, we transfer the clean must to a concrete vat with a cooling plate, where it undergoes spontaneous alcoholic fermentation with its native yeast (we do not seed it), never exceeding a temperature of 13°C. Once fermentation is complete, the wine is moved back to a temperature-controlled tank where it will settle for a month at 6°C. After this time, it is racked and then bottled en région, without stabilizing or filtering, so it will most likely leave natural impurities in the bottle.
