Red Wine DOP from Sierra de Salamanca 100% Paraje el Ituero 75cl

A single-variety Rufete from a single vineyard located in the El Ituero area (Cristóbal de la Sierra), planted in 1930 at an altitude of 890 m on granite soil. These old vines, whose self-regulation due to the altitude and poor soil, means that none of them weigh more than a kilo (at best). We vat the whole bunches without subjecting the grapes to mechanical stress, tipping the boxes directly into the tank. We only tread the grapes initially to generate the first must and facilitate the spontaneous start of alcoholic fermentation. Fermentation is slow, with a controlled temperature of 23°C and daily punch-downs. We decant before the end of alcoholic fermentation (at around 1030 density points) to avoid extracting the vegetal nuances of the stems, and we lightly press them in a vertical press. Once alcoholic fermentation (now liquid-only) has completed in second-year French oak barrels, the wine continues with malolactic fermentation without moving the wine from the barrels. After both fermentations are complete, we transfer the wine to a tank to clean the coarse lees and leave it there for another 40 days to decant again and transfer it to barrels as clean as possible. It matures for 12 months in new 500-liter François Frères barrels. This wine is the expression of a region, a unique native variety, tradition, feeling, and family.
