This lenticular-shaped cheese is obtained by pasteurizing the best quality cow's milk and maturing for a minimum of six days. It comes with a thin, stretchy, shiny, soft crust and is all wrapped with our signature white cotton band. Inside, a uniform paste, without cracks, in color between ivory white and pale yellow, shows rounded eyes distributed irregularly. Finally, an aroma reminiscent of yogurt and butter, and the fundamental flavor of milk, slightly salty and medium-low acidity, allow us to identify an exquisite Arzúa-Ulloa Cheese from BAMA. It can be accompanied with honey or quince if eaten raw, but it is also very suitable to enrich vegetable or meat dishes or to obtain juicier fillings. Furthermore, as it melts at low temperatures without losing its properties, it is ideal as an accompaniment to sandwiches or to make toast and gratin dishes.
