It is a gastronomic, age-worthy, complex, and mineral wine that requires some aging to unleash its potential. The manual harvest takes place a month later than usual in our region, in small boxes, and the grapes are chilled for at least one night at a temperature of 3°C. Subsequently, a thorough table selection is carried out before moving to tanks for immediate draining. Part of the must ferments in very fine-grained French oak barrels and the other part in stainless steel tanks. It remains on its lees until June. La Marciana Rosé is a special aging wine that evolves and gains complexity with time in the bottle.
