• From our own, controlled organic vineyard, PAGO AYLES, located at the foot of the winery. The vineyard is located between 600 and 650 meters above sea level and has an average age of about 25 years. Vines are cultivated using the unique double cordon system.
• The soil is made up of a poor layer settled on a calcareous clay base, a terroir that results in a wine in which fruit, concentration, and minerality are perfectly expressed. Precision viticulture where we seek a perfect quantitative and qualitative balance to achieve better leaf balance and slower ripening.
• We avoid unwanted microbiological processes and allow the grapes to ferment during transport. We take advantage of the significant temperature difference between day and night that occurs at the Aylés estate. The proximity to the facilities ensures that the harvested grapes are in the winery in less than 10 minutes, maintaining their freshness and all their properties.
• The grapes of each variety were separately incubated in stainless steel tanks, where they underwent a cold pre-fermentation maceration. After a temperature-controlled maceration using manual punch-downs and at the end of alcoholic fermentation, the wine was aged in oak barrels where a batonage process took place until malolactic fermentation was complete.
• Each variety was then aged in the same barrels for a minimum of 4 months.
