- This is a typical cheese from the Valencian Community. This napkin cheese, made from 100% pasteurized goat's milk, owes its shape to the cloth that wraps it during the ripening process. The rind is globular, with rounded edges and pronounced radiant striations due to the knotting of the cloth. A slight ripening can be seen in this cheese.
