Activity
The company is dedicated to the production and sale of artisan cheeses, primarily Manchego cheese with a Protected Designation of Origin (PDO), made with raw sheep's milk at the La Prudenciana farm in Tembleque, Toledo.
History
The company has its origins in agriculture and livestock farming at the La Prudenciana estate, founded by Alfonso Anastasio Valera in the 1950s. Initially focused on wheat and barley crops, the business expanded to sheep farming in the 1960s. In 1984, with the creation of the Manchego Cheese PDO, the family decided to transform the milk into Manchego cheese, beginning production in 1989. The company has evolved over four generations, incorporating innovation and new products such as the Buenalba line in 2007, while maintaining tradition and artisanal methods. Currently, the transformation of sheep's milk into cheese is the main activity, complemented by agriculture and livestock farming.
Product types
The company offers artisan Manchego cheeses with Designation of Origin (semi-cured, cured, aged, and in olive oil), as well as spiced sheep cheeses under the Buenalba brand (with rosemary, paprika, red wine, and white wine). It also sells cheese packs, spiced cheese boards, and hand-painted ceramic cheese dishes. Highlights include the Artisan Manchego Cheese DOP and the Buenalba spiced sheep cheeses.
Mission
Creating raw milk Manchego cheese using artisanal methods and ingredients, protected by the PDO, combining tradition and innovation to maintain high quality standards and pass on family and local values to new generations.
