Carbonic maceration is the ancestral method of winemaking in our region, dating back to the rise of Manuel Quintano. This wine pays tribute to those winegrowers who worked this way for centuries. Made from a selection of 20-year-old Tempranillo plots planted on calcareous soils at an altitude of 500 meters. Careful hand-picking is carried out in crates to ensure the perfect condition of the fruit upon arrival at the winery. The wine is then vatted in sealed tanks and whole-bunch fermentation is carried out for 12 days. Draining and gentle pressing are used, using only the "trasnocho" (heart) grapes to make this wine. Clean and bright, with a medium depth and violet tones. Very clean and intense on the nose, with a presence of red and tropical fruits and floral nuances. The palate is fresh and light, with an easy flow and a rounded finish, inviting repeat consumption. The aftertaste is fresh and aromatic.
