El Saúco is our most mineral and delicate Tempranillo vineyard. It is over 80 years old and sits at an altitude of 485 meters, where it thrives on sandy, calcareous soil. It undergoes a five-day cold pre-fermentation maceration until the spontaneous onset of alcoholic fermentation. The wine is aged in open-sided 5,000 kg wooden vats with manual pumping and treading. It is then aged for 20 months in French oak barrels. Clean and bright, with intense coloring and a cherry red color. Great complexity on the nose, which grows as the wine breathes. Floral nuances of violets, balsamic notes, and hints of pastries emerge. Medium-full on the palate, it reveals its full potential on the finish, displaying extraordinary levels of length, persistence, and finesse. The subtle presence of the wood helps elevate the wine from a discreet background.
