Diapiro embodies the craftsmanship of the people of Pinoso, embodying the entire winemaking tradition of their village. The fusion of old, low-yield Monastrell vineyards located on the slopes of Mount Cabezo de la Sal, combined with the fresh fruit of Tempranillo and the concentration of Merlot from our region, creates a perfectly balanced wine that conveys a multitude of sensations. A rigorous selection of our finest grapes, harvested by hand and fermented in stainless steel tanks at 24°C, shapes this exceptional wine. During the cold winter, the wine rests in nearly century-old concrete tanks, where it rounds out and matures. Finally, a short, four-month aging in new French oak barrels provides gentle notes of roasted coffee and cocoa, completing a luxurious composition. A complex and elegant wine in memory of the winegrowers from whom we inherited our passion for our land.
