Diapiro White Wine Bottle 0.75 L

With Diapiro Blanco, the winery's intention was to revive a unique variety traditionally grown in our fields: the Merseguera. For the technical team, this dream, long sought after for several years, has come true. For this project, we used bush-trained vines planted on limestone soils at an altitude of over 650 meters. These vineyards boast controlled yields and are dry-farmed, with minimal irrigation during the hottest summer months. The climate surrounding the vineyards is continental Mediterranean, with dry winters, generally cold springs, and very warm summers with predominantly cool nights. This results in grapes with a good sugar level and a good concentration of acids and aromas. After manual harvesting during the early hours of the day, we gently destem and crush the grapes. We cold-macerate the must with the skins at 8°C for approximately 6-8 hours. We ferment part of this must in stainless steel tanks at 14°C on fine lees. The other part is fermented in new French oak barrels, followed by light aging on lees for two months, and with battonage twice a week, protecting the aromas and achieving a much more balanced and harmonious wine.
