Selecting our finest organic grapes, the Monastrell and Merlot grapes are vinified traditionally and separately to extract the typical characteristics of each variety. The Merlot lends aromas of pepper, black fruits, and truffle to the blend, while the Monastrell brings the warmth of our Mediterranean climate to the wine, making it fruity and smooth. The third variety that makes up this special wine is Alicante Bouschet, also known as Garnacha Tintorera, known for producing tannic wines with a very intense color. To extract as much fruit as possible, the grapes are harvested early, and special yeasts are selected to enhance the fruity character of this variety. The skins and seeds are macerated with the wine at low temperatures for a short period (as is the case with rosé wines) to prevent excessive tannins. The result is a wine of a fabulous ruby color accompanied by intense fruit aromas and soft, ripe tannins.
