Bestué Finca Rableros, Crianza 85% Tempranillo 15% Cabernet Sauvignon

Harvested in the last week of September. Machine-picked at dawn, seeking the lowest temperature. Destemming and cold maceration for 6 days at 8ºC in 23,000 kg tanks. Manual manipulation of the caps by means of 2 pumping-overs a day, one in the early morning and another in the late afternoon. Slow and controlled fermentations reaching 28ºC at their maximum points. Devatting and filling of barrels to carry out malolactic fermentation and subsequent ageing for 9 months in barrels 3 to 4 years old.
