Manual manipulation of the caps by means of 2 pumping-overs a day, one in the early morning and another in the late afternoon. Slow and controlled fermentations reaching 28ºC at their maximum points. Devatting and filling of barrels to carry out malolactic fermentation and subsequent ageing for 9 months in barrels 3 to 4 years old.
