English:VARIETIES: 100% Mencía- PRODUCTION AND AGEING: Manual harvest. The old plots have very little production, the bunches are small and the berries are very separated. In 2015, 100% of the wine was fermented with the stems. It ferments with its own native yeasts, without temperature control. We use the “pisage” technique. Fermentation takes approximately 12 months in French barrels of different uses.- TASTING: Deep red colour, with garnet tones. On the nose, aromas of roasted coffee, tobacco leaves and also rosemary. On the palate, the wine is deep, dense, fleshy, and leaves an extraordinarily fresh sensation for a wine of this age. It is powerful and complex, with mineral notes that remind us of coal and iron. SOIL: Very diverse soils in each area. Clay, sand, abundant pebbles, quartzite and slate. VINEYARD: Old vineyards, some of which are more than 120 years old. Four orientations on a plot of just 1.6 ha and an approximate altitude of 600 m. The Tilenus vineyard is in an area where there is always wind, this air is an incredible sanitary treatment, which prevents humidity from staying under the leaves and keeps the bunches healthy. The extraordinary conditions of these old vineyards mean that ripening is very regular, almost independent of the temperatures and the difficulties of the years.
