“Organistrum” refers to an ancient stringed instrument with a perpetual bow that medieval troubadours used to play in poetry recitals held in the villages near Santiago de Compostela. It was probably the difficulty in playing it that caused its disappearance over time. Thanks to the fact that Maestro Mateo sculpted it in stone in the Portico de la Gloria in the Cathedral of Santiago and the sponsorship of Bodegas Martín Códax, it was able to be recovered and today it forms part of the instrumentation that the medieval music group Martín Códax uses in its concerts and recordings. WINEMAKINGTo make Organistrum, our viticulture team selects traditional vines with low vigor. Vines that offer balanced, leafless and airy plants, with good exposure of the bunches, producing grapes with a high concentration of aromas and thick skins.The main characteristic of Organistrum is the balance between the character of the varietal and the barrel. This is due to combining a selection of the vineyard with a very special production process. The grapes are harvested manually in 20kg boxes and, once they reach the winery, they are cooled for 36 hours at a temperature of 5-10ºC. In this way, cold pressing is carried out, guaranteeing the greatest preservation of aromas. The alcoholic fermentation begins in stainless steel tanks and, halfway through the process, the wine is transferred to 300L French oak barrels. In these, the alcoholic fermentation will finish and the malolactic fermentation will take place. During this time, batonnage is carried out twice a week. Once the fermentations have finished, the wine is aged in the barrels for 6 months. In order to achieve the perfect fruit/barrel integration, Organistrum ages it in stainless steel tanks for 12 months before being bottled.
