Manual harvest. Whole bunches are put into vats and fermented in wooden vats with very light daily pumping over. Maceration took place for 10 days. After the separation of the tear wine, the rest of the tank is crushed to extract the heart of the wine. No stabilisation is carried out prior to bottling.
