In the municipality of Bullas we find from the Roman domination elements related to the winemaking tradition as the child of the grapes, small sculpture that appeared in the excavations of the Roman Villa of Los Cantos in Bullas, or the seal of the Castellar, allegory to the harvest . Both examples of the economy and the dedication of the inhabitants of this land. With the arrival of Islam to the Peninsula, the production of wine is reduced by the limitations imposed by the Koran with respect to alcoholic beverages, although there are references that reveal consumption throughout the medieval Muslim world. After the Reconquest, wine reappears as a food item of primary necessity and at the same time as a liturgical element, which gave rise to a new expansion of viticulture. In addition the cavalry orders protected the plantations and warehouses since they were the sustenance of the castles and villas of this dominion. From s. XVII Bullas population grows and so does its wine production again because in this land there are many wineries or wineries where they collect and create excellent wines. In the year 1660 the historian Martín de Ambel informs about the population increase in Bullas and also highlights: "... in the place where was the old village of Bullas and in its surroundings there are many wineries, whom in this land they call cellars, where they collect and drive more than 20,000 arrobas of excellent wine, which is collected from a large number of peonados of vineyard, with much resemblance in the greatness of the clusters to those that the explorers brought to their leader and captain of the People of God, of the land of Promise ... " The most conclusive data on the intense production of wine in Bullas is offered by the large number of traditional wineries that are still preserved, both in urban areas and in the countryside. The concentration of these wineries is such that almost all the houses in the old town treasure the remains of old wineries, some of which are still in perfect condition and are more than 300 years old. The production of wine in 1850 was already 1,120,000 liters, so large wineries are built to produce large quantities of wine as the cellars of the Casilla (now Bullas Wine Museum), or the House of Tercia. Farmers decide to create associations of farmers, the first cooperative was born in 1950, at the same time it is created to be able to fight against the prices that were less and less advantageous for the producers. From Bullas throughout the twentieth century was achieved the official recognition of the quality and uniqueness of the wines of the region with the creation of the Denomination of Origin. banner


History
The winemaking tradition in Bullas dates back to Roman times, with historical references to wine production during the Arab rule and the Reconquista. From the 17th century onward, wine production increased significantly in the region. In 1917, the Catholic-Agricultural Union of San Isidro and its cooperative winegrowers' section and winery were founded, pioneering winemaking cooperatives in southeastern Spain. In the 1920s, the union acquired the land that currently houses Bodegas del Rosario, whose facilities were inaugurated in 1953. During the 20th century, the winery contributed to the official recognition of the quality of the region's wines with the creation of the Denomination of Origin.


Product types
The company offers a variety of wines, including reds, whites, rosés, and sweets. Highlights include single-varietal wines such as 100% Monastrell and 100% Syrah, and blends such as Monastrell with Syrah or Macabeo with Malvasía. They also produce organic wines, and some of their wines have received international acclaim.
