A soft cheese with a mouldy rind, creamy and with personality. Lactic at first, it develops more complex aromas over time, reminiscent of truffles, some types of mushrooms and the damp pastures found in this area of the Pyrenees. The rind is natural and completely edible. It is ideal for raclettes and fondues. Also in salads, combined with fruit, etc.
