Features

  • Skin-tight maceration at a low temperature for 4 hours, followed by tank bleeding to obtain the best quality must. Static racking is carried out using cold. Alcoholic fermentation takes place in stainless steel tanks, beginning fermentation at 14–15°C and not exceeding 21°C throughout the fermentation.
  • After alcoholic fermentation, between 15% and 20% of the wine is aged for a couple of months in 225-liter second-year French oak barrels, with two battonages per week. Once barrel aging is complete, a blend of Chardonnay and Macabeo is made, resulting in a cava base wine with a temperature of less than 11.5°C.
