Maskarada is a company dedicated to the breeding, processing and direct sale of products derived from the native Euskal Txerri (Black Pig) breed of pig, covering the entire process from genetics and free-range breeding to the production and marketing of meat products and sausages, both in its own store and in restaurants.


History
Maskarada was founded over 20 years ago as a project driven by José Ignacio Jauregi, who continued the family tradition of pig farming and committed to reviving the Euskal Txerri breed, which was on the verge of extinction in the 1980s. Through a process of research and development, the company has managed to increase the number of specimens and highlight the gastronomic qualities of this breed, establishing itself as a benchmark in the production and processing of its products in Navarre.


Product types
Maskarada offers a wide range of products derived from Euskal Txerri pork, including aged txuleta (rib steak), ham, cured loin, chorizo, salchichón (cured sausage), jowl, pancetta, txistorra (a type of sausage), confit ribs, cooked pig's ear, truffle sausage, and pâté with Ezpelette pepper. They also sell selections of fresh, cured, and prepared meats, as well as tasting menus at their restaurant.

Maskarada's mission is to recover and promote the native Euskal Txerri breed through sustainable and artisanal production, guaranteeing animal welfare and the quality of the final product.
