Young white wine DOP Sierra de Salamanca 8 Virgins 75cl

We harvest early, in the first week of September, to maintain the freshness of the varieties and prevent the alcohol content from skyrocketing. After destemming and crushing, we vat the wines in refrigerated stainless steel tanks at a constant temperature of 7°C. After three days of maceration on the skins, we bleed and proceed to vertical pressing with a pneumatic balloon inside the tank to prevent oxidation. We keep the resulting must in stainless steel tanks at 6°C for 14 days for settling by precipitation. The clean must begins spontaneous alcoholic fermentation four days after settling with its own yeasts, so as not to rob it of any nuances of its characteristic varietal character. The temperature is always controlled below 13°C, thus highlighting its aromatic expressiveness. Once dry, we rack to remove the coarse lees and keep it in the tank until spring, putting the fine lees in suspension (with CO2) weekly to achieve the weight in the mouth and the structure that characterize it.
