Red Wine DOP from Sierra de Salamanca La Zorra Raro 75cl

Raro takes its name from its initials: Rufete Autentico, Truly Original. It is our freshest single-variety Rufete, with which we aim to showcase the variety, highlighting its main characteristics: its acidity, minerality, and that characteristic smoky touch. Its two vineyards of origin are relatively young (2013), so we pick off 30% of the grapes at veraison to regulate the amount of load per vine and thus preserve its quality. This circumstance, combined with the fact that they are trellised, results in very early ripening. Selection is carried out on the table with complete destemming without crushing. Vatting and cold pre-fermentation maceration lasts several days with manual punching down. Spontaneous alcoholic fermentation with native yeast at a controlled temperature (maximum 24°C) and two or three pumpings over daily. After decanting and light pressing, the wine undergoes malolactic fermentation, partly in used barrels and partly in stainless steel tanks. We let it settle in the tank for two months before aging, and then for at least 10 months in French barrels.
