White Wine DOP from Sierra de Salamanca La Novena Virgen 75cl

A single-variety white Rufete, sourced from four small plots of slate soil in the Valdáguila Valley, Garcibuey (El Bardal, Valdemingones, Los Helechales, and El Tesoro). This variety is native to our Sierra and was not registered in the Catalogue of Plant Varieties of Spain until May 2020, when it was published in the Official State Gazette (BOE) as a vinifiable variety under the name "Rufete Serrano Blanco," after 13 years of formalities to obtain it. It has very thick skin, late ripening, and a creamy, dense character on the palate. It is incubated and subjected to a 48-hour skin maceration process, which allows the cell walls of the skin to degrade and extracts the aromatic and polyphenolic phase from the skins into the pulp. Once pressed inside the tank with a pneumatic balloon to prevent oxidation, the must is then racked in a tank at 4°C for subsequent settling. After this, we transfer it to 500-liter French barrels where it undergoes alcoholic fermentation. At the end of alcoholic fermentation, it is transferred to a tank, where it is left to settle for three weeks to remove the coarse lees. It is then transferred to 500- and 225-liter French barrels with its fine lees for eight months of aging with weekly batonnages.
