  • The entire collection of casks is divided into 115 casks in 6 casks. The Palomino grapes are harvested by hand. Pressing is followed by alcoholic fermentation at a controlled temperature of 24ºC. Once the wine reaches 11% -12% vol., it is fortified to 15.5% vol. It then undergoes at least six and a half years of biological ageing in a dynamic criaderas and soleras system.
