Features

  • The entire cask collection is divided into 115 casks across six stages. The Palomino grapes are hand-picked. Pressing is followed by alcoholic fermentation at a controlled temperature of 24°C. Once the wine reaches 11%-12% vol., it is fortified to 15.5% vol. It then undergoes at least six and a half years of biological aging in a dynamic criaderas and soleras system.
