- Acorn-fed Iberian presa is one of our cuisine's best-kept secrets. It's the cut found at the top of the loin, along with the shoulder, of 100% Iberian pigs raised free-range in the pasture. It's a delicacy with very little fat and a characteristic marbling. Its slow curing at the Cinco Jotas Winery makes this artisanal piece a gastronomic gem.
