The company was founded by José Luis Holgado Carrero and Andrés Holgado, who began producing artisanal cheeses over 10 years ago, using milk from native Payoya goats and Assaf sheep. In 2010, they established themselves in the El Chaparral Industrial Park in Villamartín, Cádiz, where they exclusively manufacture their products. Since their inception, they have maintained a commitment to quality and tradition, which has earned them numerous national and international awards.

It offers a wide range of artisanal goat, sheep, and mixed cheeses, including fresh, semi-cured, cured, smoked, butter, paprika, rosemary, emborrados, and truffle (Patrufo) varieties. Highlights include the Cured Goat Cheese with Iberian Pork Lard, the Semi-Cured Sheep Cheese, and the Semi-Cured Goat and Sheep Cheese. It also sells gourmet products such as sausages, preserves, pâtés, sweets, oils, and wines.
