Páramo De Guzmán


Since 1985 our cheese, Páramo de Guzmán, is characterized by the painstaking artisanal process with which it is carried out. The elaboration begins with the milking of the oldest and most noble of the Castilian sheep breeds, the Churra sheep. The production of our cheeses is made only twice a year, in spring and autumn, times in which the pastures have the highest concentration of aromas and fl ...avors that identify Páramo de Guzmán: thyme, rosemary and sage. Only milking milk from the same day is used, natural curds are used and the milk is used raw at a controlled temperature of 37 ° C in order not to lose any of its nutritional qualities and maintain its unique flavor. We bet on a totally handmade process respectful to 100% with the raw material. As a result, our cured cheese with an attractive ivory tone is obtained, with a full and permanent flavor that fills the taste buds with plant life. A production carried out with a methodical preparation process -12 months minimum of cure- that has earned us the name of the best cheese in the world *. Páramo de Guzmán has become "the best cheese in the world" in the United States after the launch of the bestselling book The Telling Room, the work of the American journalist Michael Paterniti who traveled to Spain in 2000 to learn the history of Páramo de Guzmán, the cheese he had fallen in love with ten years before. Many international media such as The New York Times or The Wall Street Journal have echoed the very special story that exists around cheese. In 2014 our cheese factory suffered a devastating fire that destroyed all of its production. From Páramo de Guzmán we launched a charity auction with the last surviving cheese, with the aim of supporting the scholarship program for the children of the most needy families organized by the NGO EDUCO. At present, the cheese factory once again has cheese production. It is the perfect pairing for our wine, Raíz de Guzmán, D.O Ribera del Duero 100% Tempranillo. A wine of unparalleled personality, characterized by the perfect combination of aromas and flavors.
